Banana pancakes

Banana pancakes

Adapted from a Christine France recipe.

I don’t even like warm bananas, but these are stupidly good.

Ingredients

175g plain flour

4 beaten eggs

2-3 mashed bananas

300ml evaporated coconut milk (regular tinned coconut milk will do, but if you can get the evaporated kind these are amazing)

Recipe

·       Whizz the ingredients up in a mixer or processer. It is tempting to just give them a whisk, but these are definitely better with a finer batter, rather a lumpy one.

·       The batter can be on the thin side, depending on the consistency of the brand of coconut milk. If it seems too runny to fry with right away, let it chill in the fridge for a bit, and it’ll thicken up.

·       Heat a flat shallow pan. Add a smear of butter. When it sizzles, add dollops of batter and fry pancakes, two at a time, turning once.

·       If there are other people in the house, fend them off with your elbows.
