Banana pancakes Adapted from a Christine France recipe. I don’t even like warm bananas, but these are stupidly good. Ingredients 175g plain flour 4 beaten eggs 2-3 mashed bananas 300ml evaporated coconut milk ( regular tinned coconut milk will do, but if you can get the evaporated kind these are amazing ) Recipe ·        Whizz the ingredients up in a mixer or processer. It is tempting to just give them a whisk, but these are definitely better with a finer batter, rather a lumpy one. ·        The batter can be on the thin side, depending on the consistency of the brand of coconut milk. If it seems too runny to fry with right away, let it chill in the fridge for a bit, and it’ll thicken up. ·        Heat a flat shallow pan. Add a smear of butter. When it sizzles, add dollops of batter and fry pancakes, two at a time, turning once. ·     ...

Sourdough donuts

  Sourdough donuts   Thank you for prompting me to write this down. I never remember to do it, even when the results are good - and I will want to make these again!   Context: when I make bread I generally start on a Friday or Saturday night by making a sourdough ‘sponge’ and leaving it overnight.   Start that far in advance, and make less bread than usual, and you can have donuts for tea the next day.     So for a generous plate of donuts and a loaf you need: Sourdough starter – a ladleful Water - 600ml Strong bread flour - 1kg Caster sugar – about 100g [plus extra for dredging) Egg - one Fat (I used ‘block Stork’, because half the household are dairy-free, but butter would obv. work) – about 50g, melted Salt Cinammon Vanilla extract Mixed spice Oil to fry   [ Halve these quantities if you are only making donuts, and don’t want a loaf as well. Or make twice as many donuts].   So Step 1...
